Recipe(tried): Ruthie's Mom's Mofongo

Main Dishes - Pork, Ham
A slightly different version of mofongo
My mom makes hers with pork meat.

Saute:
3-4 tablespoons Spanish sofrito (a mixture of fresh cilantro, onion, oregano, garlic green pepper)
with:
1 can tomato sauce
Add:
salt and pepper to taste
Add:
1 1/2 to 2 lbs. diced pork

Cook over low heat until pork is tender.

Slice plantains, fry and place in a mortar, smashed some although you want some texture. Place in a plate or bowl and place some of the pork mixture inside.
