Salad Dressings
French Dressing
(Franzosische Rahmmarinade)
1/2 tsp.salt
1/4 tsp.pepper
2 Tbls.lemon juice
4 Tbls.olive oil
3 Tbls.sweet cream
Combine all ingredients in order given & mix well.Serve with green,meat or vegetable salad.
Club Dressing
(Clubmarinade)
2 Tbls.olive oil
2 Tbls.vinegar
2 Tbls.cognac
1/2 tsp.salt
1/4 tsp.pepper
Mix all ingredients well.Serve with lettuce,fruit or meat salad.
Rhineland Dressing:
(Rhineland Marinade)
1 Tbls.powdered sugar
2 tsp.Worcestershire sauce
2 tsp.tomato ketchup
1 1/2 Tbls.vinegar
1 Tbls.olive oil
1/2 tsp.salt
1/4 tsp.mustard,prepared
dash of pepper
1/4 tsp.Tabasco sauce
1 1/2 Tbls.lemon juice
Blend ingredients in order given & mix well.A perfect all-around dressing for vegetable,meat or fish salad.
Cream Dressing
(Rahmmarinade)
1 tsp.mustard,prepared
1 tsp.salt
1 1/2 tsp.confectioner's sugar
dash of pepper
2 Tbls.flour
1 tsp.butter
1 egg yolk
1/3 c.vinegar
1/2 c.heavy cream,whipped
In double-boiler over hot,not boiling water beat mustard,salt,sugar,pepper,flour & butter.Add egg yolk & vinegar & continue beating till mixture thickens.
Remove from heat.When cool,fold in whipped cream.This dressing may be served with any vegetable,meat or green salad.
