Recipe: Creamy Cucumber and Mint Salad Dressing (using yogurt and buttermilk)

CREAMY CUCUMBER AND MINT DRESSING

"Firm, small-seeded European cucumbers work best in this dressing."

1/2 cup nonfat plain yogurt
1/4 cup skim-milk buttermilk
3 tablespoons nonfat mayonnaise
1/3 cup finely diced peeled European cucumber*
1 tablespoon finely snipped fresh mint
Salt, optional
Ground black pepper, to taste

In a small bowl, stir ingredients together until evenly blended.

Spoon over greens.

*If your cucumbers have large seeds, remove them before dicing.

Makes about 1 cup dressing
