Recipe: Sand Cake, Dive In Cake, and Tropical, Beach, Luau Ideas for Lynn Texas

Sand Cake posted by Carla, Maryland 1-11-2004
The Sand Cake recipe was featured in Parents Magazine in May of 1996 page 137. It is served in a plastic sand bucket and dished out with a plastic sand shovel. I made this for my daughter's sixth birthday party. It was a wonderful hit. The guests and parents loved. The recipe is as follows:
2 pkg (3.5 to 4 oz. each) vanilla-flavored instant pudding and pie filling mix.
4 cups milk
1 container (8 oz.) nondairy whipped topping
1 box (10.5 oz) miniature chocolate chip cookies
2 cups vanilla wafer cookie crumbs, divided.
and shell shaped candies or pebble candies for top decorations.
1. Prepare pudding according to directions on package. Using rubber scraper, fold in the whipped topping, then fold in chocolate chip cookies.
2. Spoon half of the pudding mixture into a clean (new) 2 1/2 quart plastic beach bucket. Sprinkle with half of the vanilla cookie crumbs. Repeat layers.Cover and refrigerate at least 4 hours to soften cookies. Decorate with candy shells and pebble candies. Refrigerate until ready to serve.
When I was ready to serve it, I placed the bucket on a serving platter covered with blue wrapping paper (as the water), I then piled vanilla wafer crumbs around the bucket and placed the candy shells around on the platter too. It made the presentation very memorable. If I did it again, the only thing I would change would be instead of shoveling it onto small paper plates, I would look for tiny sand buckets for them to eat their sand cake out of!!!
