SANDWICH CUBANO (Cuban Sandwich)

Makes 4 large sandwiches
Cuban Bread-available at Latin Markets (or substitute French bread if you must, but not a baguette)
Butter, softened
Dill Pickles, sliced
1 lb LECHON ASADO (baked (roasted) pork thigh (PERNIL DE CERDO ASADO), or any other substantial cut of baked pork), sliced
1 lb. good quality ham (they use ham that had been baked with a sweet crust, like Smithfield or other), sliced
1/2 lb. Swiss Cheese, sliced (use a mild Swiss like baby Swiss)
Yellow mustard (optional)
Mayonnaise (optional)
Preheat a griddle or large saut pan. Cut the bread into 8 inches long sections. Slice in half (horizontally) and spread with butter on the inside of both halves. Make each sandwich with the ingredients in this order: pickles, roasted pork, ham, and cheese. Be generous with the portions!
Place the sandwich on a lightly greased hot griddle or saut pan. Place a heavy iron skillet or bacon press on top of the sandwich to flatten.
Grill the sandwiches for 2-3 minutes on each side, until the cheese is melted and the bread is golden. Slice the sandwich in 1/2 diagonally and serve. For extra flavor sprinkle a little MOJO SAUCE on the meat before adding the cheese.
MOJO SAUCE (Cuban Marinade)

8 to 10 garlic cloves
1 tsp salt
1/2 tsp black peppercorns (whole)
1 tsp oregano
3/4 cup sour orange juice (or half lime and half orange juice)
Use a mortar and pestle (Note from Gladys; I use the processor when I am in a hurry). Mash into a paste. Add the sour orange and let sit at room temperature for 30 minutes or longer. Season the beef or chicken with the MOJO or use as a light sauce for the slices of pork and ham in the Cuban Sandwich. Delicious!
