Recipe: Tomato-Bacon Rabbit (cheese sauce over toast, microwave)

1/2 cup beer or ale
1 teaspoon Tabasco pepper sauce
1 teaspoon Worcestershire sauce
8 ounce extra-sharp (orange) Cheddar cheese, shredded
1 teaspoon cornstarch
1 teaspoon dry mustard
1 egg yolk
3 strips bacon, cooked and crumbled
1 small tomato, seeded and diced
French bread slices, toasted (for serving)
In a 2-quart microwave safe bowl combine beer, pepper sauce and Worcestershire sauce. Microwave, uncovered at high power, 1 minute.
Meanwhile, in a medium-size bowl, toss shredded cheese, cornstarch and mustard. Whisk the cheese mixture into the beer mixture; microwave 1 minute. Stir; cook 30 seconds longer.
Whisk in egg yolk; microwave 1 minute, stirring occasionally, until smooth.
Stir in crumbled bacon and tomato. Serve immediately over slices of toasted French bread.
