Recipe: Sandwich Pizza

Sandwich Pizza

Yield 6-8 servings
1 pound loaf French bread
1 cup pizza sauce
1-2 cups shredded mozzarella cheese
4 ounce can sliced mushrooms, drained
16 ounce can artichoke hearts, drained
1/2 large green pepper, sliced
1/2 large red or yellow pepper, sliced
1/2 cup chopped red onion
2 ounce can sliced black olives, drained
Coarsely cracked black pepper
Preheat oven to 350F.
Slice loaf in half lengthwise. Slice mushrooms, peppers, onion and olives. Open artichoke hearts and pizza sauce. Combine all ingredients and spread each half with equal amounts of ingredients. Sprinkle lightly with black pepper.
Bake for 7 to 10 minutes, or until cheese melts. Slice each half into fourths.
Approximate nutrition analysis per serving: 253 calories, 11.7 g protein, 41.2 g carbohydrates, 5.66 g fiber, 5.3 g fat, 174 mg calcium, 421 mg potassium and 741 mg sodium.
