Recipe: Zesty Italian Seafood Gumbo (quantity recipe, 20 servings)

ZESTY ITALIAN SEAFOOD GUMBO

2 cups chopped onion
2 cups chopped green bell pepper
10 cloves garlic, finely chopped
1/2 cup olive oil
1 (#10/102 ounce) can Contadina Whole Tomatoes and Juice
1 1/2 quarts chicken broth
1 (20 ounce) can Contadina Tomato Sauce
2 tablespoons crushed dried basil
2 tablespoons crushed dried thyme
2 tablespoon paprika
3 1/2 pounds fish filets
7 cups fresh or frozen sliced okra (optional)
1 3/4 pounds shrimp

In large saucepan, cook onion, green pepper and garlic in olive oil until tender.

Stir in tomatoes and juice, chicken broth, tomato sauce, basil, thyme and paprika. Bring to a boil. Reduce heat and simmer 20 minutes.

Stir in fish and okra, if using; cook 6-8 minutes.

Add shrimp; cook 3 minutes or until shrimp are pink and fish is opaque.

Makes about 20 servings
