Recipe: Strawberry Rice-Cream (rice pudding with whipped cream and strawberries folded in)

1 cup uncooked rice
1/2 cup sugar
1 1/4 tsp vanilla, divided use
1 1/2 cups sliced strawberries (fresh or frozen)
3 cups milk
2 eggs, beaten
1/2 cup heavy (whipping) cream
Place rice and milk in top of double boiler or in pan over boiling water. Cook, uncovered, for 1 hour, or until rice is tender, stirring occasionally.
Stir in sugar. Add a little hot rice to beaten eggs, then add eggs to remaining rice mixture in the pan. Stir in vanilla; mix well and continue cooking over hot water for 1 minute. Cool.
Whip the heavy cream with the remaining 1/4 teaspoon vanilla. Fold in strawberries, then fold into the rice mixture.
Chill until serving time.
