Recipe: Scalloped Tuna Casserole (using cottage cheese, 1960's)

SCALLOPED TUNA CASSEROLE
Mary tried this recipe and made changes (noted in the ingredient list).

2 eggs, well beaten (1 egg)
1 (7 oz.) can tuna fish, drained and flaked
1 1/2 cups creamed cottage cheese
2 cups soft bread crumbs (replaced with cooked macaroni)
1 tsp. salt
1/8 tsp. ground black pepper
1 (4 oz.) can button mushrooms, drained (omitted)
2 tbsp. chopped green bell pepper
2 tbsp. chopped pimiento
2 tbsp. chopped onion
1/4 cup grated Parmesan cheese (for topping)

Beat egg(s) in mixing bowl. Add all ingredients except grated Parmesan cheese and mix well. Pour into a buttered 1-quart casserole. Top with the grated cheese.

Set the casserole in a pan of warm water and bake in a preheated 350 degree F oven for 1 hour.
