Recipe: Scallopine Di Pollo Alla Romana

Scallopine Di Pollo Alla Romana
Yield: 6 Servings

1 1/2 lb boneless chicken breast, cut in 3 pieces
3/4 lb mushrooms, sliced
1 sm onion, finely chopped
1 garlic clove
8 tb butter
2/3 c dry white wine
salt/pepper
parmesan, grated
2 lb tomatoes, chopped

Heat 5 T of butter in skillet, saute mushroom until golden brown, about 5 minutes. Add onions and garlic, cook until onion is golden.

Add tomatoes, salt, simmer; cover, stirring occasionally for 30 minutes.

Wipe chicken with damp paper towels, sprinkle with salt and pepper. Heat 3 T butter in another skillet. Add chicken, a few pieces at a time, cook until lightly browned on both sides, about 5 minutes.

Remove garlic from sauce and pour over chicken, simmer, covered for 5 minutes. Sprinkle with Parmesan.
