Recipe: Scotch Eggs
Misc. This came from an international ethnic ckbk, under the English recipes. I think the original Scotch Eggs were always deep fried (not the greatest for health, but...)
Scotch Eggs
6-8 hard cooked eggs
2 uncooked eggs, beaten
flour
3/4 lb fine grade spicy country-style sausage
fine dry bread crumbs
vegetable oil for deep frying
Shell the hard cooked eggs & lightly dip them in the beaten
eggs. Roll them in flour & wrap completely in a thin layer
of sausage meat. Brush the sausage with additional beaten
egg & roll in bread crumbs. Fry in deep fat (375 deg) for
2 - 3 min. or until the bread crumbs are golden brown & the
sausage firm. Place in a baking dish & bake @ 400 deg.
uncovered for 10 min. Serve cold.
