Recipe: Scottish Griddle Scones

SCOTTISH GRIDDLE SCONES

3 cups sifted flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
Buttermilk (as needed)
Flour (for dusting)
Butter (for serving)

Add baking soda, baking powder, and salt to sifted flour. Add enough buttermilk to make a really soft dough; so soft that you can barely handle it.

Turn it out onto a floured board and divide in half. Pat each half into a round about 1/2 inch thick and cut into quarters. Dust them lightly with flour on both sides.

Cook on a greased, medium-hot griddle. When they have risen and are brown on the bottom, turn and cook the other side.

Serve immediately. Split and spread with butter at table.
