SINGING HINNIES
1/2 cup raisins
2 1/2 cups flour, sifted
1/2 teaspoon salt
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/3 cup butter
1 egg, beaten
1 cup sour cream
Rind of 1/2 lemon, grated
Dredge raisins in 2 tablespoons flour; set aside.
Resift remaining flour with dry ingredients. Cut in butter until mixture looks like coarse meal; set aside.
Mix egg with 1 tablespoon water and add to flour along with the sour cream, raisins, and lemon rind. Mix well. Divide dough into 24 balls. Flatten to 1/2-inch thick round cakes. Place on greased cookie sheets.
Bake in a preheated 425 degree F oven for 12 to 15 minutes, or until golden brown.
VARIATION:
ORANGE SCONES:
Replace 1/4 cup sour cream with 3 tablespoons orange juice, then proceed as above.
