Recipe(tried): Seppo and all........Lemon couscous

This is one of my favourite side dishes,I often make it when we have a
barbecue,it looks pretty too..........
LEMON COUSCOUS
***************
1/2 pkt instant couscous
1/2 red onion,diced
1 yellow and 1 red bell pepper,seeded and diced
1 fresh green chilli seeded and diced
1 Tbls each freshly chopped corinder and flat leaved parsly
8 mint leaves,shredded
Juice of 1 medium lemon
1/2 cup olive oil
Freshly ground pepper to taste

Make up couscous,as per pkt.add lemon juice,oil and pre-pared veggies and herbs
and combine well.Chill prior to serving.
