Shirley's Camp Stew with Chicken or Venison
1 pkg of chicken tenders
1 large white onion
carrots
red potatoes (leave skin on potatoes)
celery
2 cans low sodium chicken broth
1 can of 5 buttermilk biscuits
lemon pepper
olive oil
large pot 2-4 qt.
Cut all ingredients into large chunks.
Brown chicken and 1/2 of the onions in olive oil. Add carrots, potatoes, celery and remaining onions. Add chicken broth . Season with lemon pepper to taste.
Cover and bring to a boil then simmer for about 30-45 minutes depending on how done you want your vegetables. Stir often. Add the bisquits broken in quarters, pushing them down into the liquid and cook for about 10 more minutes.
Serve in bowls. The biscuits taste like dumplings and are wonderful on cold nights camping out. Very easy if you prepare all ingredients before leaving home and put them in plastic baggies and just dump them in the pot without wasting any time.
Venison Variation:
Cubed Venison
1 can Beef Broth instead of Chicken Broth
1 Can Ro-Tel mild tomatoes/chilies
Same vegetables listed above
Flour the venison, brown it and 1/2 onions in olive oil. Add remainder of ingredients and cook until done. Add biscuits as above.
This one is great for those hunters!
