Here are a few Shrimp Scampi recipes.
EASY SHRIMP SCAMPI
3/4 c. butter (lightly salted)
1/4 c. chopped onion
3 to 4 garlic cloves, crushed
fresh parsley
1 lb. cleaned and deveined
shrimp
1/4 c. dry white wine
2 Tbsp. fresh lemon juice
salt and pepper to taste
Melt butter over low heat. Add onion, garlic and
parsley and saute for 10 minutes. Add shrimp and stir for 2 to
3 minutes. Add lemon juice and wine to shrimp and simmer for
another 5 to 6 minutes. Season with salt and pepper. Serve
with linguine or rice. Enjoy!
SHRIMP SCAMPI
1 lb. large shrimp
2 sticks butter
3 Tbsp. olive oil
1/4 c. white wine (Chablis)
juice of 1/2 lemon
1/4 c. parsley
salt and pepper
8 cloves garlic, minced or 2
tsp. minced garlic in jar
Peel shrimp; devein and butterfly. Lay shrimp on bottom
of baking dish. In saucepan, combine ingredients and saute for
several minutes. Pour mixture over shrimp; sprinkle with
bread crumbs. Broil 11 to 12 minutes (not too close to flame).
Serve over linguini with lemon wedge.
