SCAMPI WITH PASTA
1 lb angel hair pasta
1 tbsp salt
1/3 cup extra-virgin olive oil
2 lb med shrimp, peeled & deveined
1 tbsp chopped garlic
1/4 tsp crushed red pepper
3 tbsp chopped flat-leaf parsley
1/4 cup chopped green onion
1 cup white mushrooms, sliced
1/2 cup dry white wine
1 cup shrimp stock
1/4 cup softened butter
salt & pepper to taste
Bring a large pot of water to a rolling boil with salt. Add pasta and cook until al dente. About 3 minutes. Drain well and set aside.
Heat the olive oil over medium heat in a large stainless-steel skillet. When hot, add shrimp and saute` for about a minute, turning once.
Add garlic, crushed pepper, parsley, green onions and mushrooms. Cook about another minute.
Add wine and shrimp stock and bring to a boil. Reduce to a light sauce consistency, then remove from heat. Whisk in softened butter.
Add the pasta to the pan and toss it around with sauce and shrimp. Serve garnished with fresh oregano and fresh chopped parsley.
Serves four entrees or 6-8 appetizers
