Recipe: Six Cheese Italian Spinach Artichoke Dip

SIX CHEESE ITALIAN SPINACH ARTICHOKE DIP

1 (10 oz.) package frozen chopped spinach, thawed, squeezed dry
1 (14 oz.) can artichoke hearts, drained, fine chopped
1/2 cup reduced-fat mayonnaise
1/4 cup light sour cream
1/2 teaspoon sea salt
1 (7 oz.) package Tuscan herb shredded cheese, seasoned according to package directions
1/2 cup tomato, chopped
FOR SERVING (OPTIONAL):
Baked corn chips
Chunky Salsa
Reduced fat sour cream

Preheat oven to 350 degrees Fahrenheit.

Combine spinach, artichoke hearts, mayonnaise, sour cream and salt in large bowl; stir well. Add seasoned cheese; stir to blend. Spoon mixture into medium baking dish.

Bake uncovered for 30 minutes, or until cheese is melted.

Sprinkle with tomatoes. Serve with tortilla chips, salsa and sour cream.

Makes 8 servings
