Here's a recipe for smoked salmon souffle. Seems like you could just substitute the smoked haddock for the smoked salmon and it would work fine. Good luck!
SMOKED SALMON SOUFFLE
Perfect for an elegant brunch or a light dinner. Serve with lightly toasted baguette slices topped with cream cheese and caviar, preferably salmon caviar.
Serves 4-6.
4-1/2 tablespoons butter
4 1/2 tablespoons flour
1 1/2 cups steaming hot milk
1/2 teaspoon salt
1/4 teaspoon white pepper
dash nutmeg
6 egg yolks
8 egg whites
1 cup chopped smoked salmon
Preheat oven to 375.
Butter a 2 1/2 quart souffle dish.
Melt butter over low heat and stir in flour. Slowly add the milk, stirring until there are no lumps. Whisk egg yolks in a bowl. Whisk in milk and seasonings. Stir in salmon. Beat egg whites until stiff and fold in gently. Turn into buttered dish, gently smoothing top. Bake until puffed and light brown, about 35 minutes. Serve immediately.
