Recipe(tried): Smothered Green Beans, New Orleans Style and TY: Shoe Sole Pastry
Side Dishes - VegetablesSMOTHERED GREEN BEANS, NEW ORLEANS STYLE
Years and years ago, I posted here looking for a shoe sole pastry recipe to duplicate the New Orleans treats. Dori was kind enough to share a recipe that is very similar to what I recall (Shoe Soles using Puff Pastry). Others shared elephant ears recipes, too.
I am so grateful, and very sorry for the delay in my response; I got sick shortly after posting, long story short: you can't kill bad grass, lol, and here I am, still kicking! TYJ.
Anyway, thanks to all. As a little ty gift, here is how I fool my particular sis with my smothered green beans, New Orleans style:
She only eats fresh foods, thank you, and I don't always have fresh green beans and I hate to french cut them anyway, so I buy canned.
I fry two or three strips of bacon in the bottom of a heavy pot till they are crisp, then break them and add back to the drippings. I add four large cans of green beans (one with liquid, the other three drained with liquid reserved) and two cans of potatoes (if I have the little fresh potatoes, I peel, halve, and add them). Then I add the reserved liquid to the top of the beans/potatoes mix, cover, and cook on medium heat, stirring every so often. When everything is hot and the potatoes fork-tender, it's done.
For years, she has tried to duplicate this dish with fresh beans, but she swears they aren't as good as mine. I can't understand that, as this is about as close to a 'lick and a promise' dish as I've ever made.
I will say that I am often asked at potlucks and parties for the recipe which I am too ashamed to share, since people seem to think it took forever to make and I was just using canned items from the cupboard!
Anyway, thanks, all!
