Recipe: Sock-It-To-Me Cake (3)

What you've described sounds like the Sock-It-To-Me cake - you can leave out the cinnamon-nut mixture if you'd like.

Sock-It-To-Me Cake

1 box Duncan Hines golden butter cake mix
1 (8 oz.) sour cream
1/2 c. sugar
4 eggs
2/3 c. Wesson oil

Mix with mixer. Grease and flour angel food pan or Bundt pan. Mix 1/2 cup chopped pecans, 3 tablespoons sugar, 1 teaspoon cinnamon. Pour 1/3 batter in pan. Put sugar, cinnamon and nuts mixture over and cover with rest of batter. Bake at 325 degrees for 55 minutes or longer. Cook for 20 minutes then turn upside down on plate and drizzle icing of 2 tablespoons milk, 1 cup powdered sugar, 2 tablespoons soft butter and 1 teaspoon vanilla over top of cake. 1 pkg. butter recipe yellow cake mix
1 stick margarine
1 c. sour cream
1/2 c. Wesson oil
1/2 c. sugar
4 eggs

Mix all ingredients and beat well with mixer until smooth, about 2 minutes. Fold in 1/2 cup chopped nuts (pecans). Pour 1/2 batter into a greased and floured bundt cake pan. Sprinkle 1 tablespoon cinnamon and 1 tablespoon sugar, mixed together, over top of batter in pan. Pour rest of batter over top. Does not need icing (but can dribble some over top if desired. Test for done, cake moves away from sides of pan. Bake at 350 degrees for 45-60 minutes. Let cool 1/2 hour before removing from pan.

Sock-It-To-Me Cake

1 box yellow cake mix
1/2 c. sugar
3/4 c. Crisco oil
1 (8 oz.) carton sour cream
4 eggs
2 tbsp. cinnamon
4 tbsp. brown sugar
1/2 c. chopped pecans and or coconut

Mix cinnamon, sugar, and nuts; set aside. Combine all other ingredients; mix well. Pour half of ingredients in greased bundt or tube pan. Sprinkle sugar-cinnamon mixture over top and pour remaining mixture over top. Bake at 325 degrees for 1 hour. Remove from pan when cool. Spoon icing over top.

ICING:
1 c. powdered sugar
1 tsp. vanilla
2 tbsp. milk
2 tbsp. melted butter

Heat in boiler until melted. Add vanilla.
