Recipe(tried): Some English scone recipes
Misc.Scones
MAKES 12
225g/8oz self raising flour
2 teaspoons baking powder
50g/2oz butter (gives the best taste, but margarine CAN be used...)
25g/1oz caster sugar
1 egg
milk
preheat the oven to 220 degrees C/425 degrees F/gas Mark 7.
Lightly grease 2 baking trays
Sieve the flour & baking powder into a mixing bowl. Add the butter.
Rub the mixture with your fingertips until it looks like breadcrumbs.
Add the sugar.
Break the egg into a measuring jug,add milk until it's up to 150ml/5fl oz.
Stir this into the flour mixture (YOU MAY NOT NEED IT ALL) and mix into a soft -
but not sticky - dough.
dust down a surface area with flour, and turn out the dough onto it.
Knead lightly, then roll into 1cm/1/2 inch thickness.
Cut into rounds with a fluted 5cm/2 inch cutter and place the "scones" onto the
baking trays.
When all the scones are ready to bake, brush the tops with milk (or use any
left-over egg/milk mixture)
Bake in the oven for 10 minutes, or until they are a pale golden brown.
When cooked turn out onto a wire rack.
best eaten as fresh as possible..
BROWN SCONES
use wholemeal flour but other than that the same as above (you may need a little
extra liquid)
CHEESE SCONES (my faves!!)
Remove the sugar from the scone ingredient list and method, replace with FINELY
grated cheddar cheese (I use 100g/4oz - you ca use more or less dependent on
your own preference) and these are best eaten just out of the oven with LASHINGS
of butter!! (Naughty but oh so nice!)
As you can see, the above recipe is soversatile, you can mix and match
ingredients just following the basic rules.
