Recipe: Sopa de Coco y Platano: Coconut Plantain Soup

Sopa de Coco y Platano: Coconut Plantain Soup
4 overripe thinly sliced plantains (peel must be black).
4 tablespoons salted butter
2 chopped onions
8 mashed garlic cloves
5 cups beef, chicken or vegetable broth
1 cup canned evaporated milk
1/2 cup coconut milk
1/2 cup condensed milk
Juice of 1/2 lemon
Salt to taste
Saute onion in butter and salt till caramelized. Add garlic. Saute one minute. Add sliced plantains and saute one minute. Add broth. Bring to a rolling boil.
Immediately reduce heat to low and simmer 30 minutes.
Blend till smooth. Pour back into pot. Add evaporated, coconut and condensed milk. Simmer 5 minutes. Add lemon juice and serve.
