Recipe: Cuban Red Bean Soup

Sopa de Frijoles Colorados Cubana: Cuban Red Bean Soup

1-1/2 lbs dried red kidney beans, soaked overnight
5 diced tomatoes
2 small diced chorizos
6 cups water
6 mashed garlic cloves
2 chopped onions
1 chopped green pepper
1 cup cubed calabaza (pumpkin)
1 teaspoon salt

In a hot frying pan, cook chorizos until well done. In chorizo drippings, saute onions, green pepper, pumpkin and salt. Add garlic when onions are well cooked and saute a few minutes more. Add saute to a large pot with 6 cups water and bring to a boil. Drain beans, add to pot, and bring back to a boil. Add tomatoes. Cover and reduce heat to medium-low. Simmer approximately 1-1/2 hours, or until beans are tender.

Serve with white rice. Serves 6
