Recipe: Orange Roughy with Cinnamon Sauce

ORANGE ROUGHY WITH CINNAMON SAUCE
Adapted from: Big Flavors of the Hot Sun: Recipes and Techniques from the Spice Zone by Chris Schlesinger and John Williams
Servings: 4

1 1/3 lb orange roughy fillets
1/4 tsp salt
freshly ground black pepper
1/4 cup lemon juice; fresh
1/3 cup olive oil
1 tbsp fresh oregano, chopped OR 1 tsp Dried oregano
1 tsp garlic, minced
1/4 tsp cinnamon

Preheat broiler.

Place fish on broiling pan and sprinkle with salt and pepper.

Put pan on the second highest oven rack and broil 10 minutes per inch of thickness, or until cooked through.

Whisk together remaining ingredients adding pinch of salt, and pepper. Spoon sauce over fish. Serve.
