Recipe: Genuine Cuban Black Beans
Misc.Cuban Frijoles Negros: Cuban Black Beans
1-3/4 cups dried black beans soaked overnight/water discarded
4-1/2 cups water
1/4 cup olive oil
4 chopped large onions
2 chopped green peppers
7 mashed garlic cloves
7 chopped pimento-stuffed olives
1 teaspoon salt
Extra virgin olive oil for sauteing
1/2 teaspoon oregano
Pinch ground cumin
3 bay leafs
1-1/2 tablespoons vinegar
1 teaspoon olive oil
1 teaspoon sugar
Add 4-1/2 cups water to beans in pot with 1/4 cup olive oil. Bring beans to a boil, reduce heat to low, cover and cook 1 hour or more, until beans are extremely tender and liquid is reduced and thick. Saute onions and green peppers in olive oil and 1 teaspoon salt until onions are well cooked. Add mashed garlic, and saute another minute. Add chopped olives and a teaspoon of olive JUICE (liquid olives are packed in). Add oregano, cumin, bay leafs, olive juice, more salt to taste, and vinegar. Add the above to cooked beans. Cover and simmer on low heat 15 to 20 minutes, stirring occasionally. Remove bay leafs. Add sugar, drizzle olive oil over beans and stir.
Serve over white rice and enjoy! Serves 4-6
