Recipe: Sopa De Frijoles Blancos Con Tomate (Tomato and White Beans Soup)

SOPA DE FRIJOLES BLANCOS CON TOMATE
(TOMATO AND WHITE BEANS SOUP)
1 cup white beans, soaked overnight
2 tablespoons butter
1 pound pork, cubed
1 medium onion, finely chopped
6 cups water, divided use
2 1/2 cups chicken stock
3 cups tomatoes seeded
1/2 cup white wine
cilantro (for garnish)
Soak beans in water to cover overnight. Drain and set aside.
Melt butter over medium heat and saute pork and onions and fry until pork is brown on both sides.
Add 2 cups water and stir. Remove from stove and set aside.
In large pot, bring remaining water and stock to a boil. Add beans, tomatoes, wine and the pork and onion mixture. Reduce heat to medium, cover and simmer for 2 hours.
Garnish soup with cilantro and serve.
Servings: 10
