Recipe: Sopa De Frijoles Colorados (Red Bean Soup)

2 pounds kidney beans
2 tablespoons butter
2 tablespoons olive oil
1 large onion, finely chopped
1 large carrot, chopped
2 tablespoons parsley, finely chopped
3 cloves garlic, finely chopped
6 cups water
1 pound pork, cubed
3 large tomatoes, seeded and chopped
cilantro (for garnish)
Soak beans in water to cover overnight. Drain and set aside.
Melt butter with the oil in a large soup pot. Add onions, carrots, parsley and garlic. Cover and cook until the onions are tender.
Add water and bring to a boil over high heat. Add beans and pork to soup and bring them back to a boil. Add tomatoes, then cover and reduce heat to low. Simmer for 1 1/2 hours.
Serve garnished with cilantro.
