Recipe: Paprika Soup (Austria)

PAPRIKA SOUP

3 slices bacon, diced
1 large onion, chopped
2 large green pepper, chopped
1 tablespoon flour
1 tablespoon paprika
6 cups beef broth
1/4 teaspoon salt
4 large potatoes, diced
TO SERVE:
1/2 cup sour cream

Saute bacon, peppers, and onion for 10 minutes. Drain grease.

Add flour and paprika and cook for 2 minutes.

Add broth, potatoes, and salt. Simmer for 20 minutes or until potatoes are done.

TO SERVE:
Pour into soup bowls and top with sour cream.
