Recipe: Great Northern Tuna Salad

Salads - Main Dish
GREAT NORTHERN TUNA SALAD

1/4 cup olive oil
3 teaspoons lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup sliced green onions
2 tablespoons chopped fresh parsley -
1 (16 ounce) can great northern beans, rinsed and drained
1 large tomato, seeded and chopped
1 (6 1/2 ounce) tuna, drained and flaked

In medium bowl, combine oil, lemon juice, salt, pepper, onion and parsley; blend well.

Add beans and tomato; toss gently. Refrigerate 1 hour to blend flavors.

Divide bean mixture evenly on 4 individual lettuce-lined salad plates. Top each with 1/4 of the tuna. Serve with any remaining marinade.
