Recipe: South of the Border Lasagna

This comes from an old church cookbook. Hope it is close.

South of the Border Lasagna

12 oz. ground hamburger (or turkey)
2 cups crushed canned tomatoes
1 cup mild picante sauce
1 package taco seasoning mix
1/2 cup diced green chilies
1 cup part skim Ricotta cheese (or cottage)
8 cooked lasagna noodles
4 oz. cheddar cheese grated
4 oz. Monterey Jack cheese, grated

In large skillet, brown meat. Add tomatoes, picante sauce, taco seasoning mix and chilies. Bring to a boil. Reduce heat. Simmer uncovered for 10 minutes.

In bottom of 9 inch square pan, spread 1/2 meat mix. Top with 1/2 noodles. Spread 1/2 ricotta (or cottage) cheese on noodles. Top with Cheddar cheese. Repeat the steps again ending with the Monterey cheese on top.

Bake at 350 degrees for 20-30 minutes.
