Recipe: Taco Lasagna (using tortillas)

This recipe came in our Electric Co-op magazine this month. It's a little different, but maybe you could try it.

Taco Lasagna

1 lb. ground beef
1/2 cup chopped green pepper
1/2 cup chopped onion
2/3 cup water
1 envelope taco seasoning
1 (15 oz) can black beans, rinsed and drained
1 (14 oz.) can Mexican diced tomatoes NOT drained
6 flour tortillas (8 inch)
1 (16oz.) can refried beans
3 cups shredded mexican cheese

Cook beef, peppers and onions over medium heat until the meat is no longer pink. Drain. Add water and taco seasoning. Bring to a boil. Reduce heat and simmer uncovered 2 minutes. Stir in black beans and tomatoes. Simmer uncovered 10 minutes.

Place 2 tortillas in GREASED 13x9x2 in baking dish. Spread with half the refried beans and beef mixture. Sprinkle with 1 cup cheese. Repeat layers. Top with remaining tortillas and cheese.

Cover and bake at 350 degrees for 25-20 minutes of until heated through and cheese melts.
