(I misplaced this recipe too, and while searching the web I saw your request so when I found the original recipe - I thought I'd post it for you)
MEXICAN LASAGNA
FOR THE SAUCE:
1 1/2 lbs. ground beef
1 1/2 tsp ground cumin
1 TBSP chili powder
1/4 tsp garlic powder
1/4 tsp red pepper
1 tsp salt or to taste
1 tsp black pepper or to taste
1 (16 ounces) can tomatoes, chopped
FOR THE LASAGNA LAYERS:
10 to 12 corn tortillas
2 cups small curd cottage cheese, drained
1 cup grated Moneterey Jack cheese with peppers
1 egg
FOR THE TOPPING:
1/2 cup grated cheddar cheese
2 cups shredded lettuce
1/2 cup chopped tomatoes
3 green onions, chopped
1/4 cup sliced black olives
TO PREPARE THE SAUCE:
Brown ground beef; drain thoroughly.
Add cumin, chili powder, garlic powder, red pepper, salt, pepper, and tomatoes, heat through.
TO ASSEMBLE THE LASAGNA:
Cover bottom and sides of 13x9x2-inch baking dish with tortillas. Pour beef misture over tortillas; place a layer of torillas over the meat mixture and set aside.
Combine cottage cheese, Monterey Jack cheese and egg; pour over over tortillas.
Bake at 350 degrees F for 30 minutes.
TO TOP AND SERVE:
Remove from oven; sprinkle rows of cheddar cheese, lettuce, tomatoes, green onionss and olives diagonally across center of casserole.
Yield: 6-8 servings
