Recipe: South Sea Salad with Avocado Dressing (using lettuce and mandarin oranges)

SOUTH SEA SALAD WITH AVOCADO DRESSING

FOR THE DRESSING:
1/2 cup mayonnaise or salad dressing
1/2 cup dairy sour cream
1/4 cup pickle juice
1/2 peeled avocado, seeded and mashed
1 tbsp snipped parsley
2 tsp snipped chives
1 tsp dried dillweed
FOR THE SALAD:
1 bunch red tipped lettuce, torn (6 cups)
1 (11 oz) can mandarin orange sections, chilled and drained
1 cup fresh mushrooms, sliced
1 small onion, sliced, separated into rings
1 green pepper, sliced into rings
1/2 avocado, peeled, seeded, and sliced

TO MAKE THE DRESSING:
Combine the ingredients for the dressing. Cover and refrigerate.

TO MAKE THE SALAD:
Place lettuce in large salad bowl. Arrange mandarin orange slices, mushrooms, onion and green pepper and avocado attractively atop lettuce.

TO SERVE:
Toss salad with desired amount of chilled dressing just before serving
