Recipe(tried): Spinach and Mango Salad with Lime Vinagrette Dressing and Sugared Almonds

Spinach and Mango Salad with Lime Vinaigrette Dressing

Layer in order the following, preferably in a clear glass bowl:

Large bunch, baby spinach (regular fresh spinach will work also)
1 peeled, chunked large mango
1/2 cup dried cherries or cranberries
10 sliced large strawberries
1 bunch chopped scallions (green onions)

Sugared Almonds:
In a small frying pan over medium heat dissolve:
6 Tbsp. sugar in
6 Tbsp. water
Stir in:
1 cup chopped almonds
Cook, stirring frequently, until water evaporates. Cool.

Dressing:
Combine and shake:
Juice of 2 fresh limes
1 Tbsp. canola oil
1 Tbsp. vinegar
2 Tbsp. honey
salt/pepper to taste (optional)

At serving time scatter desired amount of dressing over salad and top with generous amount of the cooled sugared almonds.
