SPAGO CHICKEN WITH GARLIC AND PARSLEY
8 cloves garlic
1 chicken, halved
2 tsp Italian parsley, chopped
salt and pepper
2 tsp unsalted butter or margarine
1/2 lemon; juice of
Prepare grill.
Place unpeeled garlic cloves in pan of cold water. Bring gradually to a boil. Lower the heat and simmer 3-4 minutes. Drain.
Peel and finely slice the garlic. Combine the garlic with the parsley. Stuff half of this mixture under the skin of both chicken halves. Season with salt and pepper.
Place chicken on the grill and grill about 12 minutes on each side, or till tender.
Meanwhile, melt the butter in a small skillet and saute remaining garlic-parsley mixture with lemon juice until warmed through. Do no brown.
Arrange grilled chicken on serving platter and top with garlic-parsley sauce.
