Here is the recipe I always use but it does have tomatoes in it.
Spanish Rice
1/2 cup raw rice (not instant)
2 TBSP. butter
1 cup sliced onions
1 1/8 tsp. salt
1 (1 lb. 4 oz.) can tomatoes, chopped
3 TBSP. minced green pepper
2 whole cloves
1 small bay leaf
2 tsp. sugar
*Cook rice as label directs. In skillet, in hot butter, cook onions until golden and tender. Add salt, tomatoes with juice, green pepper, cloves, bay leaf and sugar. Simmer uncovered for 15 minutes. Remove bay leaf and cloves. Add rice, mix well and turn into a buttered 1 qt. casserole. Bake uncovered at 375 degrees for 30 minutes.
