ISO: In search of mexican rice

I am in search of a recipe for the type of rice served as a side dish in authentic mexican restaurants. The seasoning makes the rice red/orange in color, but it doesn't contain actual tomatoes and the rice appears to be of the minute variety. I am ready to get a job as a short-order cook in a mexican restaurant just to learn this secret! Any ideas?
