Sparerib Crown Roast
3 pounds spareibs
2 tablespoons soy sauce
1 1/2 teaspoon salt
3 cups cubed bread
1/4 cup melted butter
10 water chestnuts, chopped
1 can (9oz) pineapple tidbits
1/4 cup pineapple syrup
1/2 teaspoon ground ginger
1/4 teaspoon paprika
3/4 cup chopped prunes
Have spareribs cut in half lengthwise. Rub with 1 tablespoon of the soy sauce. Sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Skewer ends together to form crown.
Cut a circle of heavy duty aluminum foil large enough to extend 2 inches on all sides of the roast. Place roast on foil in shallow baking pan.
Combine remaining ingredients and remaining 1 tablespoon soy sauce and 1/2 teaspoon salt. Turn stuffing into center of crown.
Bake at 350 degress for 1 1/2 hours.
Servings: 3-4
