Recipe(tried): Broiled Luncheon Sandwiches (Sardinettes)
SandwichesThis is an old recipe from my Mother's recipe box (circa 1950). She often made these for Sunday lunch, after church. Perfect for summertime using vine-ripened tomatoes!

BROILED LUNCHEON SANDWICHES
4 slices bread (homemade style white) softened butter
1 can (8 3/4 oz.) Sardinettes (old brand name of sardines, oil-packed)- well drained
1/4 cup mayonnaise (BestFoods/Hellman's)
2 Tbsps. finely minced onion
2 large tomatoes, sliced
4 slices American cheese (or cheddar)*
Spread bread with softened butter. Cover with drained sardines. In a small bowl, mix mayonnaise and onion, spread over sardines. Top each sandwich with two slices of tomato and a slice of cheese. Broil until cheese is melted and lightly browned.
*Although the original recipe calls for sliced American cheese, Mom substituted thin slices of mediumn cheddar (which Dad preferred).
Makes 4 open-faced sandwiches
