Recipe(tried): Special Chicken Salad

Salads - Main Dish
Special Chicken Salad

5 cups cooked chicken, cut into chunks
2 Tbs. salad oil
2 Tbs. orange juice
2 Tbs. vinegar
1 tsp. salt
3 cups. cooked rice
1 1/2 cups seedless green grapes
1 1/2 cups celery, finely chopped(I use much less)
1 (13-oz.) can pineapple tidbits, drained
1 (11-oz.) can Mandarin oranges, drained
1 cup toasted almonds, slivered
1 1/2 cups mayonnaise

Combine chicken, oil, orange juice, vinegar and salt. Let stand while preparing remaining ingredients. Gently toss all ingredients.

This is always a BIG hit.
