Chocolate-Sauced Dessert Kabobs (grilled)
alt.cooking-chien/Rich Benner/1999
Makes 6 servings
SAUCE:
3/4 cup semisweet chocolate pieces
1/4 cup margarine or butter
2/3 cup sugar
2/3 cup (.5-oz can) evaporated milk
KABOBS:
2 medium ripe nectarines or peaches
2 ripe bananas
1/2 of a (10-1/2 oz) frozen loaf pound cake
6 whole strawberries
In a heavy saucepan, melt chocolate pieces and margarine or butter over low heat. Add the sugar. Gradually stir in milk. Bring to boiling; reduce heat. Boil gently over low heat for 8-minutes, stirring frequently. Remove from heat; set aside.
Peel peaches (if using). Remove pits from peaches or nectarines; cut into wedges. Cut the banana into 1-inch pieces. Cut the cake into 1-inch cubes. Remove stems from strawberries. On 6 long skewers, alternately thread peaches or nectarines, bananas and cake cubes. Add one strawberry to each skewer.
Grill kabobs on the gill over medium coals about 5-minutes or until cake is toasted, turning once.
To serve, push fruit and cake from skewers onto a dessert plate. Drizzle with chocolate sauce. (Any remaining sauce can be stored in a tightly-covered container for later use).
