Recipe: Basil Rice Salad

Basil Rice Salad

Makes 6-8 servings

DRESSING:
2 tbsp lemon juice
2 tbsp red wine vinegar
freshly ground pepper
2 tbsp chopped parsley
1/2 cup fresh lemon or sweet basil
1 clove garlic, minced
1/4 cup olive oil

SALAD:
1/4 cup finely chopped scallions
1 can kidney beans, drained
3 cups cooked rice
2 large carrots, shredded
2 tomatoes, cut in thin slices

Mix together all the dressing ingredients. Combine all the salad ingredients except for the tomatoes. Arrange the salad in a bowl with the tomatoes around it. Pour the dressing over and serve.
