Special Long-Cook Chicken
From the recipe files of Carole Walberg
1 chicken, thoroughly cleaned under running water and skinned
2 large cooking apples, cored and sliced
1/2 cup beer
1/2 cup water
2 tbsp oyster sauce
2 tbsp soy sauce
1/2 tsp sesame oil (optional)
1/4 tsp grated, dried orange peel
Put about a third of the sliced apples in the bottom of the crockpot, then place chicken on top of them.
Mix together the beer, water, oyster sauce, soy sauce, sesame oil, and orange peel. Place rest of sliced apples on top of the chicken, then pour liquid mixture over contents of crockpot.
Cook in crockpot on low heat 6-8 hours, then turn crockpot to high and continue cooking for at least another hour.
Remove chicken from pot and serve with rice, steamed vegetables, such as pea pods, and the cooked apples on the side.
