Recipe: Spiced Walnuts (6)

Spiced Walnuts

1 egg white
1 tsp. cold water
1 lb. walnut halves
1/2 cup sugar
1/4 tsp. salt
1/2 tsp. cinnamon

Beat egg white and water until frothy but not stiff; add walnuts and mix lightly until each one is coated evenly. Combine sugar, salt and cinnamon in a quart bowl; mix together and add walnuts. Toss walnuts lightly until covered with sugar mixture. Butter a 10 x 15 inch jelly roll pan and spread nuts evenly over buttered surface. Bake in 225 degree oven 1 hour, stirring every 15 minutes. Remove and cool.

Spiced Walnuts

1 cup sugar
1/4 cup boiling water
Pinch of salt (approx. 1/8 tsp.)
1 tsp. cinnamon
1 tsp. vanilla extract
2 cups walnut halves

Boil sugar, water, salt and cinnamon to soft ball candy stage. Remove from stove and add vanilla. Add walnut halves. Stir until syrup hardens. Spread out on waxed paper to cool.

Spiced Walnuts

1/4 cup water
1 cup sugar
1/4 tsp. nutmeg
1/4 tsp. ginger
1 tsp. cinnamon
1 lb. bag walnuts

In a large skillet put water, sugar and spices. Allow to boil and thicken. Put walnuts in pan and coat them with mixture. Spread out on a flat surface, separate and let them cool.

Spiced Sugar Walnuts

1 cup sugar
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1/4 tsp. salt
1/2 cup water
2 cups walnut halves

Combine all ingredients above except walnuts and boil to 236 degrees (soft ball stage). Add walnuts and stir until creamy. Turn out on waxed paper; separate.

Spiced Walnuts

1 cup sugar
1/3 cup evaporated milk
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. vanilla
2 cups walnuts

Cook first 4 ingredients to soft stage. Add vanilla and walnuts. Pour out on waxed paper to cool. Break apart. Can freeze. Store well.

Spiced Walnuts

Sift together 3 times:
2 tsp. salt
1 tsp. nutmeg
3 tbsp. cinnamon
2 tsp. ginger
1 tbsp. cloves

2 egg whites
2 tbsp. cold water

Beat egg whites slightly, then add water. Dip walnuts into egg mixture, then roll walnut halves, one at a time, in sugar mixture. Place in a single layer on a cookie sheet. Sprinkle remaining sugar over walnuts on the cookie sheet. Bake at 200 degrees for 3 hours.
