Recipe(tried): Spicy Crispy Chicken and Sugar Free French Delight

re: Diabetic, low fat recipes - I went through this just recently too. It was so hard to change the way I had been cooking. None of my favorite recipes could be used anymore. Here is a chicken recipe we have really liked.

Spicy Crispy Chicken

6 (approx. 1 1/2 lbs.)chicken breast halves, boned, skinned
1 egg, beaten
1/2 C. grated parmesan cheese
1/2 C. cornflake crumbs
1/4 tsp. ground red pepper (opt)( I use less)

Preheat oven to 400*
Dip chicken in egg; coat with combined remaining ingredients
Place in greased shallow baking dish.
Bake 20 min. or until tenderA dessert that I just tried and liked is:

French Delight

2 c. cold skim milk
1 pkg (4 serving size) Jell-o fat free sugar free instant pudding & pie filling. Vanilla flavor
1/4 c. General Foods International coffees sugar free, fat free French Vanilla Cafe

Pour milk into medium bowl. Add pudding mix and coffee. Beat with wire whisk for 2 min. Refrigerate until ready to serve.
