Spicy Macaroni and Cheese with Ham (from local tv guy)

2 med. green peppers
2 cups elbow macaroni
1/4 cup butter
1 small onion
2 cloves garlic, chopped
1/2 tsp. dried Tarragon
1 1/2 cups milk
4-6 drops bottled hot pepper sauce/to taste
2 1/4 cups shredded cheddar cheese
2 cups cooked ham, chopped
salt & pepper to taste

Slice peppers thin. In a medium saucepan, melt butter. Add peppers, cook and stir 1-2 minutes. Then add onion and garlic. Cook until tender. Stir in tarragon. Blend in milk. Cook until warm, and flavors are blended. Add 2 cups cheese and stir until melted. Add pepper sauce. Combine macaroni, cheese sauce and ham. Mix well. Put into baking dish. Top with with remaining cheese and bake at 350 degrees until hot (about 20-25 minutes.)
