Recipe(tried): Spicy Sweet Potatoes

These are indeed a bit on the spicy side - cut down on the cayenne if you like a milder flavor. DH says these are the best sweet potatoes he's ever had! I picked this up from Taste of Home magazine.

SPICY SWEET POTATOES

3 large sweet potatoes, peeled and cut into 1-inch cubes
2 tablespoons olive or canola oil
2 tablespoons brown sugar
1/2 teaspoon chili powder
1/2 teaspoon salt
1/8 teaspoon cayenne pepper

In a large resealable plastic bag, toss sweet potatoes and oil. Add remaining ingredients; toss to coat. Transfer to a greased 11-in. x 7-in. x 2-in. baking dish.

Bake, uncovered, at 400 degrees F for 40-45 minutes or until potatoes are tender, stirring every 15 minutes.
