Recipe: Spinach Salad with Nectarines and Raspberries

Spinach Salad with Nectarines and Raspberries and Orange Juice Dressing

ORANGE JUICE DRESSING:
1/2 cup orange juice
1/4 cup raspberry vinegar
1 tbsp. olive oil
1/2 tbsp. lemon juice
salt and black pepper to taste
SALAD:
4 cups fresh spinach, washed, stems removed
5 nectarines, pitted and sliced
1/4 red onion, sliced
1 pint raspberries

In small bowl, whisk all ingredients for the dressing.

Divide spinach among 4 salad plates. Place nectarine slices, red onion slices and raspberries on top. Drizzle dressing over salads, and serve.
